I had to say goodbye to my boss and teacher, Travis this week. He decided to quit his job as executive pastry chef to hike the entire Appalachian trail with his girlfriend and dog. But before he went, he created one of his most decadent desserts to date: a three layer cinnamon spiced chocolate and cream cake with candied chilis and the craziest looking tuile cookie garnish I’ve ever seen. It was awesome, and Travis will be missed. Thanks for all you taught me, man. And for the cool knife.
