Two of our grill guys, Austin and Andrew, like to make special sweets requests of Lauren and myself. This week: homemade rocket pops! At least that’s what they were calling them, but I remember the red, white and blue popsicles as “firecrackers.” Whatever you want to call them, they are delicious and refreshing on a warm day in an even warmer kitchen.
They were very specific about the flavors: red was cherry flavored, the white part was lemon flavored, and the blue part was also lemon flavored…but blue. We whipped up a big batch of lemon sorbet with less sugar than one would normally use (so that the pops would freeze harder than regular, scoop-able sorbet), used grenadine to make the cherry part and blue food coloring to get that good old blue flavor. We then piped layers of each color into cold shot glasses, stuck in some lollipop sticks we had lying around, and froze them overnight.
They came out great, and got me thinking about other potential frozen confections we could try to mimic. My next project is figuring out exactly what the crumbly deliciousness on the outside of strawberry shortcakes is.
