The blessed day of Chris and Anna’s nuptials has come and gone, and the wedding cake came off without a hitch! I was pretty pleased with myself, given the fact that I drove over 3,000 miles to a home kitchen to put it together in two days. I couldn’t have done it without the help of my dear friend Emily, who helped me avoid tears and total meltdown by being the best meringue stirrer, layer transporter, and flower arranger there is (the lovely rose topper was all her.)
I was too busy powering through 5 hours of straight baking to document the first day of production, but here are photos of the final product: three tiers of buttery cake layered with zesty lemon curd and all covered in rustic swoops of 7 minute frosting, which is basically marshmallow fluff. I can’t quite remember the one bite I had (there may have been wine at this wedding) but I hear it was good.
